Olives go through multiple squeezings. Extra virgin is the first one. Then comes virgin and then regular. Extra virgin is usually used in salads or on bread and rarely used in cooking.

EVOO comes from the very first pressing of the olives, and has had no chemical treatment whatsoever.
Just plain old "olive oil" is a mixture from pressing some new olives with other olives that might be going through their second or third pressings....plus it may have been chemically treated to neutralize taste or acid content.
