I want to make a soup for my husband that calls for carrots cut into matchstick strips. What is the easiest way to do this? If not easiest, then fastest? Do you think the recipe would suffer if I simply sliced the carrots??

What you actually want to do is to make a round vegetable square. The technique that I am about to describe to you will work on any round food item.
The only tool you need to do this is a good sharp chef's knife or a Chinese [not a meat] cleaver
Visualize the square that is in the middle of that round carrot
Cut the carrot in half perpendicular to it's length
place the tip of your knife in front of the carrot
and come down and through side of the carrot while at the same time moving your knife forward.The objective is to remove the minimal amount of roundness.
roll the carrot to it's new flat face and repeat the process until you have reached the goal of making a round vegetable square.
reserve the scraps for making stock- yes you can freeze them
slice the square vertically lengthwise using slices that are about 1/8" wide
stack up all the slices up and roll the stack over until the cuts you just made are now horizontal
Again make vertical 1/8 " wide cuts through the stack and guess what ? match sticks
to dice cut across the vertical using the same spacing
This is the basic slicing and dicing technique used by all food service pro's
There is one very important reason for doing all this work; Even sizes cook at even times .
The appearance is of secondary importance

Not to be the bearer of bad news, but...it's a pain! How you do it depends on the vegetable's size, shape and texture. For a carrot, you peel it, trim off the ends, and cut it into about 3-inch lengths. Then cut each one of those in half lengthwise. (It makes it a lot easier if you have one straight edge so that it balances on the cutting board.) First cut each carrot half into very thin slices, say no wider than 1/8 inch. Then take each one of those slices (you can stack up 2 or 3 and cut them at the same time) and cut them into strips also of about 1/8 inch thickness. Potatoes, turnips, radishes, jicama, and similarly firm-fleshed vegetables can be treated the same way. The basic principle is that you trim them into rectangles, then slice finely one way, then the other way. Celery is really inconvenient! One trick is to peel off the outer layer with a vegetable peeler, because otherwise the strings tend to get in the way. But because celery can't really be trimmed into a rectangle, you have to cut wedges and then turn them into finer wedges. With cucumber it's pretty much the same. Be sure and scrape the seeds and watery parts out of the middle of the peeled cucumber before you start though. Hope this reaches you in time!

best to use a meat cleaver to cut those carrots into matchstick strips, but I'm sure sliced or even thickly grated carrots would work just as well

I would dice them. peel the carrot and cut in half. then split each half lenghtwise.and cut each quarter lengthwise again. You would keep cutting them down the middle to make matchsticks but I just chop them up. The soup doesn't care.

Ever notice that straight slot on the side of your box or flat grater and thought that it's for cutting cheese? Cut your veggies into 3in. long pieces, run them through that slicing slot, stack the slices and cut down at 3/16in intervals. 3X3/16X3/16 matchstick cut

Baby carrots - slice lengthwise into 1/8" slices / turn and cut lengthwise 1/8" again. You will end up with thin long strips.

Lg carrots - cut into 2" pieces and cut as explained above.

Taste wont change presentation might, ultimately though the decision is yours to cut, slice the carrot lengthways, then take each slice and cut into strips lengthways, it doesnt take long, use a sharp knife and be careful :-)

Pampered Chef has a julienne peeler, I use that and then cut them a little smaller. It's like a veggie peeler but makes them into the long thin strips.
