Kat's wings
2 lbs chicken wing drumettes
1 cup flour
2 Tbsp cajun seasoning
Preheat oven to 400
rinse chicken wings and toss in a bag with flour and seasonings. Place on a baking sheet sprayed with canola oil spray. Spray tops of wings before baking
Roast wings on middle rack for 20 minutes turning once
In a saucepan, combine:
1 1/2 cup hot sauce ( I use Frank's Red HOT)
1 clove garlic grated or ground to a paste
1/2 tsp crushed red pepper flake
pinch cayenne pepper(leave out if you don't like them really hot)
2 Tbsp butter
heat to simmer and keep warm. When chicken has cooked 20 minutes, toss with sauce and place them back on cookie sheet. Bake another 10-15 min. until crispy

I like honey bbq. But I'm allergic to red pepper, which sucks because I love spicy food. *sigh*

Depends what I'm feelin... hot is sometimes good but I really like Honey Mustard and Teryaki.

good ol' buffalo style for a little spice, but not super hot
otherwise, garlic parmesan, plenty of butter
and the wings gotta be well done, crispy, I hate those slimy, fatty wings
