Probably just a few drops per cup, to your liking. That stuff is strong! I'd suggest you just use trial and error to figure out the amount you want.

You can do extract or oil, adding drops to taste. If you want a light peppermint taste, do one or two. If you want a TON, do five. Just drop and sip, see what you like! The recipe below recommends 3.

Here is a full blown recipe if you're looking for that. (It's from the food network's website.)

1 1/2 cups heavy cream
1 1/2 cups milk
1/4 cup sugar
1/8 teaspoon salt
6 ounces bittersweet chocolate, chopped
3 drops peppermint oil
Sweetened whipped cream, for garnish
Chocolate shavings, for garnish

In a saucepan, combine the cream, milk, sugar, and salt and heat over medium-low heat. When the cream mixture just begins to steam, add the chopped chocolate, and stir, until melted. Stir in the peppermint oil. Divide the hot chocolate among mugs and top with whipped cream and chocolate shavings.

Sounds good! Have fun!

Peppermint and chocolate. I like your thinking. Peppermint extract is very strong but it's great as a flavoring agent. I've used it in icing in place of vanilla and it was great. If you like a really strong minty taste go with 2 or 3 drops of extract. If you want just a hint of mint, one drop will do it.

One (maybe two) drop of pure peppermint extract. It depends on the age and purity of the peppermint.

Add one teaspoonful of additional sugar to tame the peppermint.

and add a dash (small, short, dash) of salt. Kicks up the sweet of the chocolate to blend better with the peppermint.

Decorate with a peppermint stick!

OR - use flavoring syrups that you'd usually use for coffee.

Yep. You only need about a drop or two of the stuff because like any other extract, it is pretty potent. Be sure to mix it well. Peppermint shnapps are always nice in hot chocolate too if your feeling frisky. Enjoy.

If you can get fresh peppermint, I would suggest steeping 2 or 3 leaves in milk and then add your chocolate. You could also jazz it up by using a peppermint candy stick to stir with.

I use a candy Cane as a stirrer. It adds the peppermint flavor, and a festive look.

Yes you can use the extract, but just a few drops, that is potent stuff.

See TIP below for your peppermint...

"Hot Cocoa" - 8 servings

1/2 cup cocoa
1/2 cup sugar
Dash salt
1/2 cup water
6 cups milk
1 tsp. vanilla extract
Whipped cream or marshmallows

1) In 3-quart saucepan, stir together cocoa, sugar and salt until well mixed; stir in water until smooth. Over medium heat, heat until boiling, stirring constantly. Cook 2 minutes more, stirring constantly.
2) Stir in milk; heat until tiny bubbles form around edge, stirring occasionally. Remove from heat.
3) Add vanilla; with hand beater, beat until smooth and foamy. Pour cocoa into 8-ounce mugs; top each with whipped cream or marshmallows. Yields 7 cups.
(TIP: Place a peppermint stick candy in each serving for a stirrer.)
MEXICAN CHOCOLATE: Prepare as above, but add 1/2 tsp. ground cinnamon to mixture; garnish with cinnamon sticks.

Yes, I would only use 1 or 2 drops depending on how much you like the taste of pepermint. I have grinded actual candy canes in my food processor to make hot chocolate and it's yummy. I only use a small piece as the taste can be overpowering sometimes.
