I'm having a few close friends over this Friday evening, and want to do something simple. I suppose it doesn'thave to be soup and sandwiches, one of them is a mac-n-cheese lover but I don't want to fuss over things or have to deal with a lot of clean-up. We're just going to play scrabble after dinner.

Make chili, put over open faced grilled cheese sandwiches. YUM!

Buy some pita bread or soft tortillas...buy pre-grated tex-mex blend cheese, brush the outside (on both sides) with olive oil and sprinkle garlic powder. Lay on a cookie sheet and put in oven at about 325 and let slowly melt and crisp. Cut in half or wedges and servie with a nice tomato soup or if you prefer, make the following:

Use a microwavable or oven safe large flat platter, press a block or two of Philadelphia cream cheese onto it, top with salsa and black olives, top with fine cheddar or tex mex cheese. You can either microwave it for a few minutes or bake in the oven until it is heated through. Put on a lazy susan and dip in with the wedges or just plain nachos if you like.

The pita wedges can be plain and seasoned with herbs and just crisped in the oven too. You can also serve hummus or other dips with that.

You get the idea...you can even make that for a snack later if it's prepared ahead and just warm it all up.

Another great dish if just to heat a block of brie cheese and then dip bread sticks into it...yum...watch for double dunkers...you may just want to put them on RUSKS (hard dried bread) and top with brie and bake in the oven.

Bruschetta on Rusks is another quick and easy thing to serve. Make your own ahead of time or use store bought. If you use rusks you can add parmesan and warm it up.

Chili is an option too, put it in a bread bowl or serve with fresh bread and butter. But a pouch of chili mix powder (or just use chili powder) brown beef, add a can of stewed tomatoes, red kidney beans, chopped onion and celery and water to cover and let simmer away. Make ahead and reheat, add some water when reheating and it's better than the first time around.

Nothing better than soup in a bread bowl during the winter.
Buy some medium sized round bread loafs (or really large rolls) from a bakery, cut out the top, scoop out the middle, and fill it up with pumpkin soup or with a butternut squash soup.

That way your guests can eat up the bowl that holds the soup, even less clean up for you.

how about this

Tomato-Basil Bisque


2 (10 3/4-ounce) cans tomato soup, undiluted
1 (14 1/2-ounce) can diced tomatoes
2 1/2 cups buttermilk
2 tablespoons chopped fresh basil
1/4 teaspoon freshly ground pepper
Garnish: shredded fresh basil

Cook first 5 ingredients in a 3-quart saucepan over medium heat, stirring often, 6 to 8 minutes or until thoroughly heated. Garnish, if desired; serve immediately, or serve chilled.


Yield: Makes 7 cups


Italian BLT Sandwiches


1/2 (16-ounce) Italian bread loaf
1/4 cup Italian dressing
1/3 cup shredded Parmesan cheese
1/2 cup mayonnaise
1/2 cup mustard
1/2 pound thinly sliced Genoa salami
1/2 pound thinly sliced mortadella or bologna
4 (1-ounce) provolone cheese slices
Romaine lettuce leaves
3 plum tomatoes, sliced
8 bacon slices, cooked and cut in half
Garnish: pimiento-stuffed green olives

Cut bread diagonally into 8 slices; arrange on a baking sheet. Brush slices evenly with Italian dressing, and sprinkle with Parmesan cheese.
Bake at 375° for 5 to 6 minutes or until lightly toasted.

Stir together mayonnaise and mustard; spread untoasted side of bread evenly with mayonnaise mixture.

Layer 4 bread slices, mayonnaise mixture side up, with salami and next 5 ingredients. Top with remaining 4 bread slices, mayonnaise side down. Secure with wooden picks. Garnish, if desired.



Yield: Makes 4 servings

How about some clam chowder, and bruschetta or melted brie with crackers or crudites...

Baked Cheese Fondue
Serving Size : 8

1 8-ounce wedge or round Cambozola, Camembert, or Brie cheese
Coarsely ground mixed pepper
2 tablespoons chopped walnuts or pecans
Sliced coarse-grain or crusty bread, toasted, or crackers

If using a cheese round, peel rind from top of cheese. Place cheese round or wedge in a quiche dish or shallow baking dish. Sprinkle with pepper and walnuts or pecans. Bake in a 450 degree F oven for 5 to 8 minutes or until cheese is softened and just begins to melt. Serve with bread slices or crackers.

I like to make melted turkey and cheese sandwiches. I toast the bread and whil I am toasting the breading, I heat the meat and cheese for about 30 seconds in the microwave. Add some mayo and mustard to the toast and combine and you have a nice tasty warm sandwich.

SOME THING DIFFERENT
1st hard to think of winter food when so hot. so i came up with this.

Heat oven 170c cut sweet potato into fatish lengths & toss in oil or spray works too. leave in oven 1 - 1.5hrs till soft but avoid colour. Make mix of 80% brown sugar, 18% cinamon ground & 1% cummin ground. Sprinkle over to serve & stack like janga game. 6/8 per serve.

Coconut & spinach soup - Been 3/4 yrs since done it want look it up so u should. spinach, coconut cream, Stock, nutmeg, cummin, season & blend very quick & simple. I'm gonna do both as special. serve both together. Parmasan & sour cream good to serve with.


Chicken sweet corn soup is nice very quick & easy too.

"Chicken Pot Pie Soup" - 8 servings

1 (1-pound, 3-ounce) tube refrigerated large buttermilk biscuits
1 lb. red potatoes; cut into 1/2" pieces
2 ribs celery; sliced
1/2 onion; chopped
2 (10 3/4 oz.) cans condensed cream of chicken soup
2 1/2 lb. rotisserie chicken, skin and bones removed; meat shredded (4 cups)
1 (10 oz.) pkg. frozen pea-and-carrot mixture
1 1/2 tsp. dried Italian seasoning
1/4 tsp. pepper
2 tbsp. chopped fresh parsley

Prepare biscuits according to package directions.
Meanwhile, in large pot, combine potatoes, celery, onion and 4 cups water; over high heat, bring to boil. Reduce heat to medium-low; stir in condensed soup. Simmer until potatoes are almost tender, about 12 minutes.
Add chicken, peas and carrots, Italian seasoning and pepper. Cook until potatoes are tender and soup is heated through, about 15 minutes. Sprinkle with parsley. Top each serving with a biscuit (or buttered toast).

boil a whole chicken until tender..about 1-1/2...remove chicken n let it cool while u add the following ingredients:4 cans of mixed vegetables,2 cans of whole,peeled tomatoes,2 medium onions,1can of cream of celery soup,1 pk.of any kind of noodles,then debone the chicken n add to pot.add salt,garlic powder,celery seed,lemon pepper,black pepper n italian seasonings,1/4 cup of sugar.simmer on med to low heat for another 1-1/2 hours.stir often to prevent sticking.serve with crackers n ice tea.as for sandwiches u can buy a variety of meats n cheese n lettuce n tomato n buy sub rolls n let them build their own sub.good eating...have a nice time

We had homemade chili (with beans) and fancy-shmancy grilled ham & cheese sammies last night. Roasted Garlic Artisan Bread, cheddar and smoked gouda on the sandwiches! Yum!
