I think that God may have created man, but then man turned around and created and re-invented his own version of God in his image to suit his own needs and wants.
Consider Fred Phelps of the Westboro Baptist Church and godhatesfags.com. Did an evil and spiteful God create this man or did this evil and spiteful man create this God? If this man is not above deluding himself, how can any man know for sure that he is not also?

Yes.
But that image of God DIED when they rejected God as God.
Gen 2:16-17
6 And the LORD God commanded the man, "You are free to eat from any tree in the garden; 17 but you must not eat from the tree of the knowledge of good and evil, for when you eat of it you will surely die."

So now no one is born with the image of God AND unless it is restored, they will have eternal death.

I think it's the other way around. I think we made god into our image - that is to say we have personfied the universal energy that powers this existence into something we can better relate to. I am sure that we are the same of the same image as god, but i think that is more true in our spirit existence - and I don't think there is any way for us to comprehend that here in the physical plane.

Yes, but the image is not of our corporeal self, it is of the eternal spirit of who we are.
Our bodies are just a material envelope which allows us to function in the environment we find ourselves in. Just as an astronaut wears a space suit. The suit is not the image of the person inside. It only allows them to survive in a certain environment. When we pass on, we leave it here, but our spirit, which our material eyes cannot see, return to the Spirit World. This world exists in the same space, but we are oblivious to see it. Scientist are know delving into this through Quantum Mechanics.

Understand the concept of god and his image and all would become clear-
God Almighty did not make us in his image but he made the true inner self of us in his image. And our true inner self is our soul (atman in Hinduism) residing within our heart.
No human body is ever created by God. As we sow so shall be reap... nothing more or less! As we perform our karma... so shall be our future. God Almighty has got nothing to do with it. God Almighty never interferes with the creation of his.
On the contrary every soul (atman) existing in the whole of Cosmos was made by God Almighty in his image. The essence of all souls (atmans) is the same.
Now depending upon the residual balance of karma of a human being in a particular life... we get our next birth. And the body manifested by our soul (atman) varies from other bodies depending on the balance of karma of each and every individual.
It is only after gaining enlightenment that every enlightened soul draws upon itself the true image of God... all dross within having been removed forever... the soul comes back to its original pristine form... the image of God Almighty in its totality! God made us in his own image, not the other way around. By that he means intelligently, not like animals who have mostly instincts to guide them, we have way more intelligence. that's what the bible means by god creating us in his own image.

God is God. God has benn since the beginning of time (which he created). God has been before time. God is the Alpha and the Omega. The first and the last. God of God light of light king of kings. He has been since the beginning of time. He didn't create himself, becuase he has always been there.
