I LOVE Oatmeal Raisin cookies. I don't like nuts or anything else. Just plain old, Oatmeal raisin cookies. Anyone out there have a really easy good tasting recipe? Maybe someone has grandma's recipe they would like to share. Thanks!

Spiced Oatmeal Raisin Drops
1/2 cup butter or margarine, softened
1/2 cup shortening
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
3 cups quick-cooking oats
2 cups all-purpose flour
1-1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins
In a mixing bowl, cream butter, shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine oats, flour, pumpkin pie spice, baking soda and salt; gradually add to the creamed mixture. Stir in raisins. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool. Yield: 4-1/2 dozen.

Oatmeal Raisin Cookies

Ingredients:

2 cups butter, softened
2 cups white sugar
1 cup light brown sugar
2 teaspoons vanilla
2 large eggs
3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups rolled oats
2 cups California raisins
2 cups pecan halves

Preparation:

Preheat oven to 350 degrees F. Grease cookie sheets or line with parchment paper, set aside.

In a large bowl, cream butter, sugars and vanilla together until light and fluffy and sugar is completely dissolved. Add eggs one at a time, beating well with each addition.

Combine flour, baking soda and cinnamon, mix well and gradually stir into creamed mixture. Fold in rolled oats, raisins and pecans. Drop by rounded tablespoonfuls onto prepared cookie sheets.

Bake for 12 to 15 minutes in preheated oven at 350 degrees F. Remove cookies to a wire rack and cool completely.

1 cup all-purpose flour

1/2 teaspoon ground cinnamon
1/8 teaspoon ground mace
3/4 cup unsalted butter, at room temperature
1/2 cup sugar
3/4 cup packed light brown sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract, at room temperature
2 3/4 cups rolled oats
3/4 cup raisins
3/4 cup chopped pecans
Position the racks in the top and lower third of the oven and preheat to 350 degrees F.
In a large bowl, whisk together the flour, baking soda, salt, allspice, cinnamon, and mace.

In another large bowl, combine the butter and sugar and, with a hand-held electric mixer, mix on low speed until just incorporated. Raise the speed to high and mix until light and fluffy. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.)

Add the brown sugar and mix until incorporated. Add the eggs to the butter mixture, one at time, waiting for the first one to be fully incorporated before adding the last. Mix in the vanilla.

Reduce the mixer's speed to low. Add the flour mixture, little by little, until a smooth dough is formed (scrape the bowl down occasionally). Turn off the machine, stir in the oats, raisins, and pecans with a rubber spatula.

Line 2 baking sheets with parchment paper. Using a spoon, drop heaping tablespoons of the dough onto the sheets, spaced about 2 inches apart.

Bake the cookies in batches, turning the pans once, until golden brown, but still soft and spongy, about 15 minutes per batch. Let the cookies cool slightly on the baking sheets, and then transfer to racks to cool completely. Store in a sealed container.

You can easily just leave out the nuts in this one!

2 eggs
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oats
1 cup raisins


Directions:

Beat together butter and sugars until creamy. Add eggs and vanilla and beat in well. Combine flour, baking soda, cinnamon and salt. Add to butter mixture, mixing well. Stir in oats and raisins, mixing well again.

Drop by rounded tablespoonful onto ungreased cookie sheets. Bake 10-12 minutes at 350 degrees. Yum!

The best recipe ever is the one on the Quaker oatmeal lid. Just leave the nuts out if you don't like them. I make these cookies at least once a week for my family and they go like crazy. They're my favorites too.

I think the absolute best oatmeal cookie recipe is the one on the back of the Quaker Oatmeal box. It's the only one I'll make anymore!
