Molasses Cookies

1 c. oil (Canola oil or very light olive oil or real butter–your call)
1/2 c. molasses
1 1/2 c. brown sugar
2 eggs
2 t. vanilla
1 t. soda
1 1/2 c. white flour
1 c. whole wheat flour
3 c. rolled oats (quick oats will work, but won’t be quite as good)
1 1/2 t. cinnamon
1/2 t. allspice
1/2 t. cloves
1/2 t. nutmeg
1 c. raisins
3/4 c. chopped walnuts
Mix dough thoroughly and drop with a tablespoon onto ungreased cookie sheets (parchment is okay). Bake at 375° for 12 minutes.

These will be dark, thick, dense, chewy, cakey cookies.

My absolute favorite christmas cookie is called a Wreath Cookie. The name comes from the shape you are supposed to form with the "dough" however, i find that much to complicated, and end up dropping the "dough" onto wax paper to set. I also have a great Peanut Butter Recipe as well, at the bottom!

Wreath Cookies

4 cups of Corn Flakes
40 marshmallows
1 tsp Almond or Vanilla Extract
1 tsp Green Food Coloring
1 stick of butter
Red Hot Cinnamon Candies

Melt butter and marshmallows in microwave for 1 minute. Stir. Heat again in micro for 30 seconds. Stir again. Continue heating in micro for 15 seconds incriments until the mixture is smooth. Stir in food coloring and extract. Mix in Corn Flakes. Drop onto wax paper. Make sure to butter hands because they will stick to you. Top with red hot cinnamon candies if desired. Allow to dry for at least an hour. Enjoy.

This recipe can be easily adjusted for any holiday, just expiriment with the food coloring!!


Ritz Peanut Butter Cookies

Take a Ritz craker, spread peanut butter onto cracker, top off with another cracker, dip in melted chocolate. Refridgerate until set. These are delicious and everyone enjoys them. This is also a great kid-friendly recipe.

What the hell are "Holiday cookies"??

Heres a cookie recipe I like.

f you like peppermint patties, you will love this recipe. These are some of my favorite layered mint bars!

Ingredients:

1 12-oz. pkg. semi-sweet chocolate chips
1 14-oz. can sweetened condensed milk
2 tsp. vanilla
6 oz. white chocolate
1/2 to 1 T. oil-based peppermint extract (to taste)
Few drops green or red food coloring (optional)

Directions:

In a heavy saucepan or a double boiler, melt the chips with 1 cup sweetened condensed milk. Stir in vanilla. Spread half of the mixture in a wax-paper or foil-lined 8-inch square pan. Chill 10 minutes or until firm. Hold remaining mixture at room temperature. Melt the white chocolate in a double boiler with 1/3 cup remaining sweetened condensed milk. Stir in the peppermint and food coloring. Spread this on the chilled chocolate layer. Chill for 10 minutes or until firm. Then spread remaining chocolate mixture on mint layer. Chill 2 hours. Turn onto cutting board; peel off paper or foil and cut into 64 one-inch squares.

My little boy really enjoyed helping me make these last weekend.

Zimtsterne (Cinnamon Stars)

3 tablespoons butter or margarine
1 ½ cups sugar
2 whole eggs
1 egg, separated
1 teaspoon lemon juice
2 1/3 cups all-purpose flour
2 ½ teaspoons baking powder
1 ¼ teaspoons cinnamon
¼ teaspoon nutmeg
½ cup finely chopped walnuts

Heat oven to 375 degrees. Mix butter, sugar, 2 whole eggs, 1 egg yolk, and lemon juice until fluffy. Measure out flour. Stir dry ingredients together; blend into sugar mixture. Stir in nuts. Roll dough, 1/3 at a time, to 1/16” thick on lightly floured board. Cut with a star cutter. Brush tops of cookies with remaining egg white beaten until frothy. Bake on lightly greased baking sheet 6 to 8 minutes. Makes 6 to 9 dozen cookies, depending on size of cookies.

Persimmon Cookies — about 3 dozen a million cup persimmon pulp a million teaspoon baking soda a million egg, beaten< a million cup sugar 2 cups flour a million teaspoon cinnamon a million/2 teaspoon nutmeg a million/2 teaspoon cloves a million cup dates or raisins, chopped a million/2 cup chopped nuts contained in the great measuring cup, positioned the persimmon pulp, upload the soda & stir. Cream the sugar & butter, upload the persimmon pulp & soda blend. upload the egg & blend nicely. upload flour, sifted spices & blend nicely upload the nuts & raisins Drop with the aid of spoonfuls on a greased baking sheet. Bake in 350 degree oven for about 8 to 10 minutes

easy and cheap. get a small tart pan/muffin tins. refrigerated peanut butter cookie dough and reeses miniature peanut butter cups. cut the dough into circles about a 1/2 in. thick, then into 4 quarters. put them in the tart pan and bake according to directions. immediately when taken out of the oven push in the reeses. makes great little easy cookies. they are rich so you dont have to eat very many. EASY for a child to do, and introduces them to cooking something they will love.

I like the chalky looking ones that are very light colored in the middle and covered with powdered sugar. I wish that I knew what they are called so I could look up the recipe.
Other that that, plain old sugar cookies. Recipe found on the back of Diamond brand sugar bags.

Here's one from my last millenium:

I don't know the name of this, my mother used to make it for Christmas and didn't put a title on her recipe.

1-1/2 cups sugar
1/3 cup water
1/4 tsp. cream of tartar
Dash of salt
1 jar (7 oz.) Marshmallow Creme
1 tsp. vanilla
1 cup chopped Pecans



Put sugar, water, cream of tartar and salt in heavy 1-quart saucepan. (Do not stir.) Bring to boil on high heat, without stirring, until candy thermometer registers 248°F.

Beat marshmallow creme and vanilla in small bowl with electric mixer on low speed until well blended. Gradually add hot sugar syrup, beating at medium speed until well blended. Beat on high speed 5 minutes or until mixture just begins to lose its gloss and hold its shape when dropped from spoon. Stir in pecans.

Put teaspoonfuls of the marshmallow creme mixture onto sheets of wax paper. Cool completely. Store in airtight container at room temperature.

Definately peanut butter cookies with the chocolate kiss in the middle. My family makes cookies for the neighbors each year for Christmas and they love 'em.

PUMPKIN NUT COOKIES

Cream Together
1 cp. crisco shortening
2 cps. sugar (I now use 1 cp. splenda)

Add
2 cps. pumpkin (16 oz. can)
4 eggs

Sift Together
4 cps. all-purpose flour
8 tsp. baking powder
2 tsp. salt
5 tsp. cinnamon
1 tsp. ginger
2 tsp. nutmeg
add 1 cp. at a time to the above mix & stir
when all ingredients are mixed well, stir in 1 cp. chopped walnuts

Preheat oven to 325
Drop by heaping teaspoon onto greased cookie sheet & bake 10 - 15 minutes

These are a family favorite. They are cake like & yummy!!!

Texas Kisses........ you need six cups of special k, measure first then crush and set aside. in a med sauce pan 1 cup sugar and 1 cup light caro syrup until it starts to come to a boil,
remove from heat and add an 18 oz jar of peanut butter preferrably jiff add special k drop on to waxed paper and add herseys kiss in middle !!! these are fantastic........
