My Grandma used to make something called a Lazy Daisy cake. I'm still trying to figure out what a lazy daisy is, but it seems like something rather pleasant. Beautiful and...very still. Kind of zen, no?

Grandma’s Lazy Daisy Oatmeal Cake

¼ cup boiling water

1 cup quick or old fashioned rolled oats

½ cup butter, softened

1 cup white sugar

1 cup brown sugar

1 tsp. vanilla

2 eggs

1 ½ cups sifted flour

1 tsp. baking soda

½ tsp. salt

¾ tsp. cinnamon

¼ tsp. nutmeg

Preheat oven to 350 degrees. Pour boiling water over oats. Cover and let stand for 20 minutes. Beat butter until creamy. Gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Add oat mixture and mix in all. Sift together flour, baking soda, salt, cinnamon, and nutmeg. Add to creamed mixture. Mix well. Pour batter into well greased and floured 9” square pan. Bake in 350 degree oven for 50-55 minutes. Do not remove from pan. Frost with Lazy Daisy Frosting.

Grandma’s Lazy Daisy Frosting

¼ cup butter, melted

½ cup brown sugar, firmly packed

3 tbsp. half & half

1/3 cup nuts

¾ cup flaked coconut

Combine all ingredients in a pan and boil until fluffy. Spread over cake.

I am not much on cake but if I had to choose it would be a coconut cream cake. I love coconut! Or maybe something light like an angel food cake topped with strawberries and whip cream.

Carrot cake. Not because I'm ginger but I've never had a bad carrot cake and it's the healthiest (?), yummiest cake I can think of so you can indulge as much as you like without feeling guilty ;)
