As you have not got onion, carrot or leeks or indeed pig's trotters etc, then 'Tripes a la mode de Caen' is out of the question.
Try 'tripe a la lyonnaise'
Cut tripe into julienne strips, season, fry (ideally with onions, mushrooms). Deglace the pan with dry white wine, stir in 1/2 cup milk/cream pour over strips, sprinkled with parsley. Serve with thin toast triangles.
