I'm folding the napkins very simply. They are just folded into rectangles to be placed under the fork on the left. Which way should the fold face? Toward the plate or away from it?

With napkins folded like a rectangle, you are going to put your napkin to the left of the fork. . The fold of the napkin should be toward the plate. If you don't have room on your table, you may put the napkin on the plate in front of the guest or put them underneath the forks.

Toward the plate. The napkins, even if paper, aren't bad enough to give someone a papercut, so there's no point in not leaving the ends out.
