Why do cables for plugs and other things around the house always become tangled in each other? even though they were originally set out neat and away from each other. And has anyone done any time lapse photography to watch what happens to the cable when you're not looking?

Well, I understand that this is a rather rhetorical question. They tangle up because people that handle them do not take enough time to dress them properly after they moved a cord in a rack or added a new one. And that seems to be the common characteristics of IT guys around the world.
As far as your idea of time-lapse pictures is concerned, I like it a lot. I personally don ‘t have access to pictures taken in our closet but I can imagine that with proliferation of security cameras, especially specialized ones like Netbotz http://www.netbotz.com/ quite a few people now have ability to go back to archives of pictures taken from a camera aiming at a rack and compile the time-lapse video of how the patch cords get messy. This certainly looks like a video that would be real fun to watch. So, thumbs up for the idea!
