You don't have to use bay leaves, but putting them in a casserole or any long cooked meal draws out the aroma of the leaves and the dish will benefit from its flavour.

You don't HAVE to, but they're aromatic, and infuse the dish with a lovely roundness and fulness of flavour, and give an appetising aroma. If you don't like bay leaves, use a herb you do like. Nothing's set in stone with cooking - you can adapt the recipes according to your own tastes and preferences.

You don't have to add bay leaves to a casserole - it's a matter of taste. A lot of people like the pungent, spicy flavour they impart (but they should always be removed before serving the casserole of course). You could use any herb, you like, eg., basil, bouquet garni, marjoram, oregano, parsley, rosemary, sage, tarragon, thyme, or mixed herbs. Alternatively, you may not wish to add herbs at all! It's pretty safe to say that you DO NOT have to put them into anything you don't want to. Unless if someone has a gun to your head, you can pretty much choose to alter recipes to taste. If you think a different leaf would taste better, go for it! No is going to stop you!

mostly bay leaves you cook to add flavor and then pull it out of the dish .. you dont need to because you can find another way to add flavor
