I have bought a long circular can of the stuff.

heres a nice Italian salad
chunk up 1 cup of the meat(little 1/2 inch cubes)
boil up 2 cups of twist macaroni
slice 1 onion thinly (little shredded strips)
mince 1 garlic clove
slice up 2 zuccinis
1/2 green bell pepper
1 cup cauliflower floretts
1 cup swiss cheese cubes (or any firm cheese really)
1/2 cup sliced black olives
1/4 cup parmeson cheese powder
1/4 cup lemon juice
1/2 cup olive oil or salad oil
2 Tablespoons white vinegar
1 tsp sugar (yes sugar)
1 tsp italian spice (oregano, thyme, basil)
salt and black pepper to taste
throw all this together and toss real well.. let marinade in fridge for an hour, toss again before serving..

San Antonio Chicken Salad

Makes 4 servings
2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled

Preparation:

Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.

To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

Chicken Salad

5 cups chopped cooked chicken breasts
1/2 cup finely chopped onions
2 celery ribs, finely chopped
1/3 cup finely chopped English cucumbers
1 large tart apple, finely chopped
1 1/4-1 1/2 cups low-fat mayonnaise
1/2 cup light sour cream
1/4-1/2 teaspoon salt, to taste
1/4 teaspoon pepper
1/8 teaspoon curry powder
1/2 teaspoon cilantro
1/2 teaspoon parsley
3 dozen wheat dinner rolls, split (optional)
lettuce leaves (optional)

Place chicken, onion, celery, cucumber, and apple in a large mixing bowl and toss together.

Add in mayo, sour cream, salt, pepper, curry powder, cilantro and parsley and mix together well.

Serve on split mini rolls or on beds of lettuce.

Mix it with some mayonaise and slivered almonds or chopped walnuts, and craisins (dried sweetened cranberries).

Or add some mayo, curry powder, chopped celery and halved green grapes.

a sandwich. cut a slice..fry it in a skillet...spread some mayo and eat up
