I'm going to answer this as if it's a math question. If the "juiciness" J of an apple is defined as volume of juice/volume of apple, or Vj / Va, and the surface area is Aa, then if we make the simplifying assumption that an apple is spherical, an apple of radius R has the ratio of juice volume Vj to surface area (Vj / Aa) as follows:
Aa = 4 * pi * r^2
Va = 4 / 3 * pi * r^3
Va / Aa = r / 3
Vj = J * Va
Vj / Aa = J * Va / Aa = J * r / 3.
Thus, no surprise, the juice-to-area ratio increases as the apple's size increases.
