There are other means of preservation like:
Dehydrating. The food materials are exposed to artificial heat in enclosed chambers. Moisture is added to the warm air from time to time to prevent too rapid a formation of crust on the outer part of the food material, due to the dryness of the air in the dehydrator. Dehydration is the safest way of preserving by drying. or By Smoking the food materials are first salted, then hung for a certain length of time in a closed room where the smoke of burning wood (generally hickory) is allowed to enter.
The outside of any smoked food is ordinarily brown. this can also be done on a barbecue with a smoke tray. Both of these methods would preserve your salmon for 6months or more with no need for refrigeration. There are many recipes at several sites to examine based on what you have on hand. Hope this helps!

The canner is to sterilize the JARS cooking the fish is by regular method though the cooking times/temprature change according to the food being canned.

You have a computer, get out of Yahoo answers and input "Canning" for crying out loud.
