Alcoholics Anonymous.
The official AA world service organization stopped using this officially in the 90's, but many still consider it to be the symbol for AA and there is a lot of jewelry and other items adorned with this symbol. They sell them at conventions and other events. The symbol undoubtedly has some other history in spiritual things, but I would strongly suspect that a college professor wearing it as jewelry is doing so as an expression of membership in AA. I don't think he would mind you asking for confirmation - you wouldn't wear the symbol unless you wanted to go public with it.

A circle with a triangle is called a theurgic circle. Traditionally, it is a summoning circle. Depending on the tradition, the magus either stands inside it to be protected from what he is summoning, or, stands outside it and the summoned being is contained within the triangle.
Its use as jewelry is unusual, because it would have little reason to exist if not being actively used for summoning. Most theurgic circles are carved into blocks of stone so that the groves may be filled with some liquid or another, rarely (if ever) blood, more often, a strong tincture that is then lit so that it burns during the summoning.
However, since you say you have a Christian professor, it's doubly strange he would wear something like this. Perhaps you should simply and politely approach after class and say, "I've noticed you wear that pendant. What's it mean to you?" That way you get his personal reason for it without assumption.

It could have many meanings. The first thing that came to my mind was that it is a symbol for Alcoholics Anonymous.
If it is a religious symbol, how does your professor's religion affect you? Are you friends on a personal level? Is she a relative? I'm a little confused as to how it would effect her ability to teach a class.
