Here's a recipe to make pancakes from scratch, scaled down to feed 2-3 people from an Alton Brown recipe.
1 c. flour
1 tsp baking powder
1/2 tsp baking soda
ground cinnamon or nutmeg (optional)
1 tsp vanilla (optional)
2/3 c. milk
3 tbsp vegetable oil (or olive oil)
2 tbsp sugar
1 tsp salt
Sift the dry ingredients together. Add the eggs, milk, oil, and vanilla. Beat until well combined.
So, what exactly are you saving when you buy a pre-made pancake mix?

Pancakes form scratch cannot be beat, the box mixes are not that good. Find a good recipe on-line and learn how to make it really well. Not too many ingredients are involved.

Pancakes from scratch, hands down
Any one who says otherwise has obviously grown up with only boxed batter.
Making pancakes from scratch is just as fast and easy as tthe boxed kind.
Mix in a bowl:
1 3/4 cups flour
2 tbsp sugar
1 tbsp baking powder
1/4 tsp salt
mix in another bowl until combined:
1 egg
3 tbsp olive oil
then add to it:
3/4 cups milk
add wet to dry and mix well.
cook on med-high heat.
you can anything to this batter to mix it up: chocolate chips, fruit, spices, whatever.

Have you tried the new Bisquick pancake mix called Shake & Pour? It is awesome! Tastes like pancakes from scratch and all you do is add water. It's great!

I make my pancakes from Bisquik using their "Ultimate Melt in Your Mouth" additions and I always add a splash of vanilla extract. I get rave reviews when I make them.

well when i'm at home i always make them from scratch. but when i'm at my bf's house, i use a mix. i kinda like the mix better though:)
