Beef & Vegetable Fried Rice
Cook: 20 minutes
Servings: Serves 4
1 lb. lean ground beef
2 cloves garlic, minced
1 tsp. grated fresh ginger or 1/4 tsp. ground ginger
1 red bell pepper, cut into 1/2-inch pieced
1 package (6 oz.) frozen pea pods
3 cups cold cooked rice
3 Tbsp. soy sauce
2 tsp. dark sesame oil
1/4 cup thinly sliced green onions
Brown ground beef with garlic and ginger in large nonstick skillet over medium heat 8 to 10 minutes, or until beef is not pink, breaking beef up into crumbles. Remove beef with slotted spoon. Pour off drippings.
Heat 2 Tbsp. water in same skillet over medium-high heat until hot. Add bell pepper and pea pods; cook 3 minutes or until pepper is crisp-tender, stirring occasionally. Stir in rice, soy sauce and sesame oil.
Return beef to skillet; heat through. Stir in green onions.
Ground Beef Fajitas
Prep: 5 minute
Cook: 15 minutes
Servings: Serves 4
1 lb. lean ground beef
1 large onion, cut into thin wedges
1 green or red bell pepper, cut lengthwise into thin strips
1 cup mild prepared salsa
2 tsp. chili powder
8 medium flour tortillas
-- chopped tomatoes
-- chopped green onion
-- sour cream (optional)
In large nonstick skillet, brown ground beef, onion and bell pepper over medium heat 8 to 10 minutes or until beef is no longer pink, stirring occasionally. Pour off drippings.
Stir in salsa and chili powder. Reduce heat to low; cook 5 minute, stirring occasionally.
Serve in tortillas with choice of toppings.
Balsamic Chicken & Veggies
Serves 4
1 cup diced onions
1 cup baby carrots halved lengthwise
4 oz sliced baby portabella mushrooms
1 lb boneless skinless chicken breasts
Cooking spray
1 tsp “any dry rub/seasoning you choose”(as long as it’s from my “Rubs” Page) See Them Here
1 & 1/2 Tbsp balsamic vinegar
Place onions, carrots, and mushrooms in microwave-safe bowl. Cover and microwave on high 5 minutes.
Preheat large sauté pan on medium-high 2–3 minutes.
Cut chicken into 1 1/2-inch-wide strips, washing your hands after, of course.
Spray pan with non-stick stuff & add chicken, using tongs so you don’t have to wash your hands again. Sprinkle with the dry rub, cover and cook 2 or 3 minutes, turning once.
Drain vegetables and stir into chicken. Cover and cook 5 minutes, stirring once, or until vegetables begin to brown.
Remove lid and cook 3 more minutes, stirring once. Stir in balsamic vinegar and serve it up – yum, yum.

Sesame Chicken
Serves 4
4 boneless skinless chicken breast halves
3 Tbsp. soy sauce
1/2 Cup flour
2 Tbsp sesame seeds
Dipping sauce such as BBQ, Plum, Sweet & Sour or Honey Mustard
Preheat oven to 450F.
Pound chicken breasts flat with a kitchen mallet (or, if you don't have a mallet, a baseball bat) between two pieces of plastic wrap. Cut into strips, about 1" x 4". Marinate them in soy sauce for 5 minutes.
Mix flour and sesame seeds on a plate & roll the drained strips in it.
Spray a cookie sheet with nonstick spray, place floured chicken strips on it and bake about 15 minutes, turning once. Actually, if you lay them on a wire rack on the cookie sheet you won't have to turn them (that will only save you 30 seconds but you now have a full 15 minutes for...whatever).

My favorite quick meal/snack was peanut butter and jelly sandwiches until I found out that the peanuts were making my son fussy ( I was breastfeeding too), so then I started eating almond butter and jelly sandwich's. Just as an FYI, other Mom's have said that peanuts or peanut butter made their babies fussy/colicky. Making a big batch of muffins (they don't take long to make), like carrot raisin, oatmeal raisin, date nut, what ever you like, and then you can eat some then and freeze the rest and just pop one or two in the microwave when you are hungry! Also, something else I think we forget to do when we are busy with our babies is to drink enough water, which can affect your milk supply too! Fill a water bottle up and keep it by the place where you nurse most often. Enjoy this time, as you really miss it when it's gone, my boys are getting bigger and don't always want a hug or a kiss from their mommy!

7 Tablespoons butter
2 Tablespoons minced fresh thyme
1 Tablespoon minced lemon peel (yellow zest part only)
1/4 Cup cream
5 lbs Yukon gold potatoes
Peel and quarter the potatoes into evenly-sized pieces. Place into a pot and fill the pot with cold water to cover the potatoes. Bring the water to a boil, reduce to rapid simmer and cook until the potatoes are tender when pierced (approximately 17-20 minutes).
While the potatoes are boiling place the butter, thyme and lemon zest into a small saucepan. Melt the butter over medium heat.
Once the potatoes are tender, drain them thoroughly. Place the potatoes into a bowl and mash using a hand masher. Once the potatoes are almost completely mashed to the desired consistency, add the melted butter mixture. Mix in the butter using the hand masher, hand-held mixer or a stand mixer depending on the desired final consistency of the mashed potatoes. Add about half the milk while mixing in the melted butter mixture. Check the potato consistency and add more milk if the potatoes are too “thick.” You may not need the entire 1/4 Cup milk depending on the type of potato you use.

Sausages in Onion Gravy with Vegetable Mash
Ingredients
4 vegan sausages
1 onion
vegetable oil
2 stock cubes
1 teaspoon marmite
vegan margarine
1 teaspoon vegetarian worcester sauce
1 parsnip
1 carrot
1 sweet potato
Finely chop the onion and fry in 1 tablespoon of vegetable oil until see through. Add the stock cubes, marmite and Worcester sauce and half a pint of water and stir thoroughly. Leave to gently simmer for 30 minutes.
Peel and chop the parsnip, carrot and sweet potato and boil for 20 minutes.
Cook the sausages according to the instructions on the packet.
Mash the vegetables with a few knobs of vegan margarine and serve next to the sausages with the gravy poured over the top.

Breakfast:
1) Scrambled eggs, fruit cup
2) Vegetable omelette
3) Cream of Rice hot cereal with fruit (sliced banana, blueberries or strawberries)
Lunch:
1) Large salad containing lots of veggies and some lean meat (chicken, ham, turkey, shrimp)
2) Corn tortillas filled with meat and veggies - could add soy cheese and/or salsa
3) Baked potato (do in microwave) topped with broccoli and ham or served with a side salad
Dinner:
1) Shrimp and grits served with a side salad or cooked greens
2) Grilled fish, roasted potatoes and vegetables
3) Stir fry with meats, assorted veggies and rice
4) Steak, baked potato and salad
5) Grilled skewers (Use chunks of chicken breast meat, green/red/yellow peppers, onion, mushrooms, zucchini, yellow squash, parboiled or canned potatoes - marinate them while you're at work, grill or broil when you get home)
6) Quick microwave dinner? Put in covered microwavable container: 1 pc salmon, 1 cup frozen veggies, 1 tablespoon lemon juice, salt and pepper. Microwave on high for 5 minutes. Leave set for 5 minutes. Open and make sure fish flakes easily. Serve with rice.

Well try that, 1 cup off RICE 1 cup off Bullion( i hope you got it in USA) Put everything in a Pan and let it Boil for 15-20 Minutes!
You can add some Chopped Chicken Brest or iff you like Sea Food add som Shrimps or Gambas to it, a view green or black Olives on top or any vegetable you like. and you will have anice tasty PAELA( Spain recepy),Iff you want moore write to hbarthelmess @yahoo.de! hello from germany good apetite

you can make a nice omlette! First, saute the filling for the omlette in a separate pan! If you like meat you can put some bacon in first with some yummy saussage and onions, green peppers and tomato, with a pinch of garlic..if not, you can put some yumm mushrooms and any other veggies that you have on hand...then you can beat an egg throw in a pinch of salt and pepper and pour it into a pan that has been greased with olive oil (make sure pan is hot) and then throw everything in on one half of the egg and once it looks ready, fold it over and voila!!

Chicken stir-fry. is rice okay? And i don't know if soy sauce has corn syrup...But this is really easy and filling. Cook chicken in skillet, then add any veggies you want, fresh or frozen, and add soy sauce and/or nuts to add flavor. Or you can just make it a veggie stir fry. So good! Can you tell I haven't had lunch yet?

HOW ABOUT MEXICAN MEATBALL SOUP?
MAKE MEATBALLS WITH WHOLE GROUND CORNMEAL AND A LITTLE TACO SEASONING. MAKE THEM SMALL, ABOUT AN INCH IN DIAMETER.
FOR YOUR SOUP BASE, USE EITHER CHICKEN OR BEEF BROTH AND SEASON IT WITH TACO SEASONING.
ADD RICE, BROWN OR WHITE, YOU CHOOSE (JUST REMEMBER, BROWN RICE NEEDS LONGER TO COOK)
ADD FROZEN MIXED VEGETABLES.
THERE, YOU HAVE IT.
