I will usually throw together a quick veggie soup. Few of cans of broth, some shredded cabbage, some carrots, a can of tomatoes, an onion, frozen peas, and potatoes if you have them. Add some garlic powder, salt and pepper. You've got a quick, satisfying meal in about 45 minutes.

When I have been busy and want a fast inexpensive hot meal I scramble some eggs. You could always make the eggs into an omelet... add cheese or onions, peppers, mushrooms if you have them on hand.

A baked potato is good too, you can top it with sour cream or cheese or ranch dressing.

Save left over crumbled bacon in a zip-lock bag and freeze it for times like this to use as a topping.

My ultra fast dinner (when I am too tired or busy to make something better) consists of fish sticks, french fries or tator tots, and peas. Very quick - just put fish sticks & fries on cookie sheet and bake, let peas cook on stove. Takes less than 30 minutes and I can veg while it's cooking. Not glamorous by any means, but in this house, we do love our fishsticks.
