Is there a difference between green peas or yellow? I once had this fabulous soup someone made and it was more yellowish than green...so not sure.

Had a beautiful smokey taste to it too. Anyone? Thanks!

Split Pea Soup With Smoked Ham
Yield: 8 Servings

Ingredients

1 lb split peas (about 2 cups)
12 c water (or more)
1 1/2 lb smoked ham hocks
3 md onions - chopped
1 tb chopped garlic
1 bay leaf
1 ts whole allspice
1 tabasco
1 croutons

Instructions

Soak split peas overnight in large pot with enough cold water to
cover by at least 3 inches. Drain. Return split peas to pot. Add 12
cups water, ham hocks, chopped onions, garlic, gay leaf and allspice.
Bring to boil. Reduce heat to medium and cook until split peas are
tender, stirr occasionally and adding more water as necessary if soup
becomes too thick, about 2 hours. Remove ham hocks from soup and
cool slightly. Cut skin and fat from ham hocks and discard. Cut meat
from bones and return meat to soup. Season soup with Tabasco, salt
and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
Bring soup to simmer. Ladle into bowls. Sprinkle with croutons and
serve.
8 servings.

I have a simple recipe for split pea soup. You can use either the yellow or the green peas. Chop an onion and a couple cloves of garlic. Saute in the soup pan until the veggies are translucent. Add your peas that have been sorted and rinsed. Cover with water, making the water level at least an inch above the top of the peas. You can add a finely chopped carrot and tiny ham chunks at this point. I add just a few drops of liquid smoke to mine, as I don't use ham. Simmer over low heat until the peas are mushy, adding more water as necessary. Check often, the peas will absorb the water quickly! When the peas are done, you can use a potato masher to get the soup smooth. Since I don't use the ham, I use an immersion blender to get it very smooth and creamy. Good luck!

I dunno about the pea colour...but...
I start with Vegetable stock and water to boil the peas... make sure you have enough liquid (the pea package will have instructions). Do rinse em, and discard any 'anomalies' you find.
I usually saute chopped onion and add that after the peas are cooked down....also sliced carrot.
I don't use ham...but I do use Turkey/Chicken Andouille Sausage...has a little kick, and it's healthier.
Salt and pepper to spice, sometimes I add some sage...a dash of cayenne, a dash of garlic powder. It's whatever I fancy that day.
Just before serving, I add a little milk or half and half.

go the HONEY BAKED ham store and buy a ham bone and their split pea soup mix- it is great and super easy
