Start with large white onions peel, then slice about 1/4 " slices.and seperate into rings.
Mix 1 cup of flour, a dash of salt and 1/2 t. baking powder.(I like to use flat beer, but water works too) Add enough liquid to make a thick batter. Deep fry in oil. Make sure oil is very hot 350 F. is great. Fry till golden brown. Then sit down & enjoy.

1/4 cup hot sauce
1/4 cup spice mix of choice
2 large yellow onions, peeled and cut into 1/8-inch thick rings (Texas Yellow [1015] or Vidalia onions are the ultimate onions to use for this!)
2 cups all-purpose flour
Peanut or vegetable oil, for frying
In a bowl, combine the buttermilk with the hot sauce and 2 teaspoons of spice mix. Add the onion rings and press to coat. Marinate, covered, in the refrigerator for at least 1 hour.
In a medium pot, heat the oil to 360 degrees F.
In a shallow bowl or large dish, combine the flour with 2 tablespoons of the spice mix. Dredge the onions in the seasoned flour, coating each ring evenly. Shake off any excess flour and carefully place the rings in the hot oil. Fry until golden brown, turning to cook evenly and prevent sticking, about 3 minutes per batch. Remove from the oil and drain on paper towels. Season the fried onion rings with spice mix, and repeat with the remaining ingredients.

Beer-Battered Onion Rings:

Unless for some unknown reason you have an open can of beer in your refrigerator, try this simple way to flatten the suds you need for this batter. Measure 1/2 cup beer in a small bowl, and stir with a fork. You're left with about 1/3 cup flat beer.

2 large onions, peeled (about 1 1/2 pounds)
2/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1/3 cup flat beer
1 large egg white, lightly beaten
1 1/2 tablespoons vegetable oil, divided
Cooking spray
1/4 cup ketchup

Preheat oven to 400°.

Cut the onion crosswise into 3/4-inch-thick slices, and separate into rings. Use 16 of the largest rings; reserve remaining onion for another use. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, salt, paprika, and pepper in a medium bowl. Stir in beer and egg white (batter will be thick). Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Dip 5 onion rings in batter, letting excess drip off. Add onion rings to pan; cook for 2 minutes on each side or until golden. Place the onion rings on a jelly-roll pan. Repeat procedure of dipping onion rings in batter and cooking in remaining oil, ending with 6 rings. Coat the onion rings with cooking spray. Bake at 400° for 10 minutes or until crisp. Serve rings with ketchup.

Yield: 4 servings (serving size: 4 onion rings and 1 tablespoon ketchup)

Ingredients
300ml/½pint vegetable oil, for deep frying
For the batter
150g/5½oz self raising flour
100ml/3½fl oz sparkling water
45g/3 tbsp fresh chives, chopped
pinch turmeric
1 red onion, peeled and sliced into rings
sea salt for sprinkling

Method
1. Heat the oil in a deep heavy-bottomed saucepan, until very hot or until a breadcrumb sizzles in it (CAUTION: Hot oil is very dangerous. Do not leave unattended).
2. Place the flour and sparkling water into a bowl and whisk together to form a batter.
3. Add the chives and turmeric and mix well.
4. Dip the onion rings in the batter and then carefully lower into the hot oil and deep-fry until crisp and golden. Carefully remove with a slotted spoon and drain on kitchen paper.
5.To serve, place onto a serving plate and sprinkle with sea salt

Homemade Onion Rings

2 to 3 medium onions
1/2 cup flour
1 egg
3/4 cup milk
1/2 cup cornstarch
1/2 cup flour
1 tsp. baking powder
1 tsp salt

Batter: Beat together egg and milk. Stir in cornstarch, 1/2 cup
flour, salt and baking powder until well blended.

Peel onions, cut into 1/2 inch slices, press out rings. Dredge
rings with other 1/2 cup of flour by shaking together in a bag.
Dip each onion ring into batter to coat completely. Slip into
cooking oil at 375 degrees F and fry 4 to 5 minutes until golden.
Drain well, sprinkle with salt and pepper to taste.

Real Onion Rings. I've made them like this for years and they are the best. Cooking with beer...it's gotta be good.

2 large Spanish onions, sliced into 1/2-inch-thick pieces
Whole milk, as needed
3 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons fine salt, plus more for sprinkling
2 teaspoons chili powder (optional)
1 teaspoon ground cumin (optional)
2 lager-style beers (12-ounces each)
Vegetable oil for deep frying

Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.
Cook's Note: If you would like onion rings with a thicker, puffier crust, dredge the onions in flour before adding them to the batter.

Slice the onions into rings, ( use red onions for a nice sweet mellow flavour ) Mix plain flour and lager and one egg together to make a paste ( use water if you wish ) , add a sprinkle of salt/pepper, and I like to add bicarbonate of soda, this will make the batter fizz up and make them go so crispy. Dip rings into seasoned flour and coat in batter, fry untill golden brown, then sprinkle with a little salt. perfecto!!!!!!!

I do cup of plain white flour, half cup of self raising, sift in a bowl, 2 eggs, mix to paste.

Keep it thick and gloopy, if too solid add a tiny bit of milk but must be very very thick still.

1 egg
1 c. cold water
2 tbsp. oil

Beat together all ingredients. Dip sliced onion rings in batter. Deep fry.

Drop in a beaten egg mixture, dredge in flour, dust with powder, fry.

Try dipping some pickles in the mixture too, fried pickle slices can be yummy too, and highly addictive.
