Also do quizzes and competitions.. give out prizes, so they will attend more and listen better.
A few years ago, when I was 10, my teacher used to do one day of Urdu (since we were all Pakistanis) 3 days of Qur’aan, and one day of Islamic Studies, and sometimes on Friday, have quizzes, and she used to give out prizes, that kept us going. She used to tell us stories and about Ramadhaan, and Salaah and Allaah the Angels and stories of the Prophets. There are many ways of how you can get your students to come back, as if they WANT to learn!
My mum and brother teach kids at home, but these are young kids, and they do like coming. Be friendly with them, joke about, but also be serious. Have a bit of fun here and there, but don’t let them get you as too soft :P
Tell their parents to encourage them at home and the likes
I hope that helps... I will try to get more.....

Assalamo Alaikom, sister
Well, I don't know what is the age of your students, but I'm assuming you're teaching them about Islam. Have you tried combining game and studies?
Little pie-charts can be terrific ice-breakers. Colourful papers that you will pass on to them and ask them to make a pie-chart. And then you just give them a topic ..... to list some Sunnah for example. Then make them compare their lists. Anyway, this is just one example. I always try to make my students work in pairs or in groups. That way they are exchanging information.
Also try to give them tasks where they will bring their own experience
Hope this helps :)
EDIT: There's a great book about methodics, I use it when i have no inspiration ...... I know it has nothing to do with Islam - it's called ''The Practise of English Language Teaching'' by Jeremy Harmer (Longman edition) ........ but, trust me, it's such a great book full of tips on how to make a kid love studying, so I guess you just have to apply it on Islam as subject.

Maybe you can start a free and easy talk about Islam and the world. Let the weekend be for every student to talk about Islam out of text book. Like how they could relate Islam in everything they do. Create a project like sciencific knowledge or something. Maybe talk about nature like the verse stated in the Quran saying about the mountain and seas. Just my lil idea.
To me education is vast and we can make it interesting for student to learn.
Edit:
zifikos give a great idea. Mini conpetition is fun. Or a project.

You can play games with them. You can prepare some cards which have informations on them (the things you are gonna teach to them) and you can make competitions with those cards and at the end of the competition you can write the winners name on the class as the "hero of the day" . Also you can make theatres in class which has lesson notes(the things you are gonna teach them) in them as conversations. They can learn even they dont notice :)
May Allah helps you

Thats a bit rude, restricting a question for muslims only? Anyway, you could always teach them about Jesus, they might have a decent reason to go to school then.
and i mean the truth about jesus, not the rubbish you people lie about him.
