I believe the oldest are the Dead Sea Scrolls.

Genesis is early, but Job is believed to be the oldest. Some Bibles have this information as to when a particular book was believed to be written. This will also work for Christianity, since it was born out of Judaism. Try searching history of book of Job and Genesis. Maybe the American Bible Society can help on dates.
