I add salt to fruits when the fruit is sour like green mango. But now, I dont eat salt anymore because it's bad for the kidney.

The salt draws out moisture, along with the sugars by reverse osmosis. You are tasting concentrated sugars on the exterior of the fruit, which hits your tongue first.

if i am not mistaken i think that it is because the salt removes the juices.
