1 orange, zest cut into strips

CRANBERRY BRIE APPETIZER BITES
INGREDIENTS:
1/4 cup sugar
1/4 cup water
1 1/4 cups Ocean Spray® Fresh or Frozen Cranberries
1 teaspoon lemon juice
1/2 teaspoon finely shredded lemon peel
25 3 1/4-inch square wonton wrappers
1 8-ounce Brie round, cut into 24 3/4-inch cubes
DIRECTIONS:
Preheat oven to 350°F. Spray 24 miniature-muffin cups with nonstick cooking spray.
Combine sugar and water in a medium saucepan; bring to a boil. Add cranberries; return to a boil. Reduce heat; simmer about 3 to 4 minutes or until cranberries pop and mixture thickens slightly, stirring occasionally. Remove from heat; stir in lemon juice and peel.
Press 1 wonton wrapper gently into each muffin cup, allowing ends to extend above. Spray edges of wonton wrappers with nonstick cooking spray. Bake for 12 to 14 minutes or until bottoms of cups are beginning to brown.
Place 1 cube of Brie in each cup; place sheet of aluminum foil over each pan to prevent excessive browning. Bake 3 to 5 minutes or until Brie is soft. Remove from oven; top each with about 1 teaspoon cranberry mixture.
Makes 24 appetizers.

Make a cranberry bread.
2 1/3 cups Bisquick Heart Smart® mix
3/4 cup granulated sugar
1/2 cup reduced-fat sour cream
1/4 cup vegetable oil
1/4 cup fat-free (skim) milk
2 tablespoons grated orange peel
5 egg whites or 3/4 cup fat-free egg product
3/4 cup fresh or frozen cranberries, chopped
1/2 cup powdered sugar
2 to 3 teaspoons orange juice
1. Heat oven to 375°F. Generously grease bottom of 9x5-inch loaf pan. In medium bowl, stir Bisquick® mix, granulated sugar, sour cream, oil, milk, orange peel and egg whites until moistened. Stir in cranberries. Pour into pan.
2. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean and top crust is deep golden brown. Cool 15 minutes. Loosen sides of loaf from pan; remove from pan and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.
3. In small bowl, stir powdered sugar and orange juice until smooth and thin enough to drizzle. Drizzle over bread.

Please know that cranberries are very sour...don't try popping one in the mouth as has been suggested. They do freeze well and cranberry bread is a truly wonderful thing at this time of year.
