Because you've just discounted the one thing they thought they could rely on to validate their self-worth: attention. They've been relying on, and successfully, attention from other men to feel good about themselves, to feel worthy. You ignoring them is basically saying "uh, no, you're not worth a man's attention. Go away." It screws with their whole world.

They're stuck-up and snobbish because they're insecure in the first place and behave that way to try to make themselves feel better about themselves. They probably don't realise (or are in denial) that such behaviour makes them even less appealing. Insecure people have their own train of logic that looks perpetually inward, which is why they often lack EQ - too preoccupied looking at themselves rather than try to be sensitive and perceptive towards others.

Because they are desperate to feel better about themselves.
Being stuck up and snobbish is a protection, a defense against not really feeling good enough, so ignoring them provokes the pain and remembrance that they dont really feel secure in the world.
