When cooking or baking with alcohol, the alcohol is burned off in the heat. It is only used for flavour.
This also depends what you are making. I do not think they're is an alcohol substitute for cooking, unless you can find a non-alcoholic version of whatever you need. But it's sort of pointless unless it is a no-bake recipe.

The reason and need to use alcohol in cooking is not for the effect of alcohol which cooks off anyway but to impart the flavor that a particular alcohol can contribute to the recipe.

It depends on what you are cooking and the alcohol you need to substitute. You can substitute apple juice, chicken stock or water for white wine in some recipes, and vanilla for some kinds of liquor when baking.

as mentioned before its only for the taste, but however if you want to avoid using alcohol do so by using certain aromas (?), such as rum, sherry etc, ask in the grocery store you can find them usually with baking ingredients,
for cooking just leave it out and add another liquid such as water, milk, cream...depending on what you think fits best...

There are many Non-Alcoholic substitutes for many drinks such as Brandy and Rum which are the most common recipe drinks.

Use Welches Grape juice or any apple juice instead. If you are forbidden alcohol in any way, do not listen to those who say "it'll burn off so its ok to use it".
