You can't. By cutting up the banana and putting it below room temperature, they will always turn brown.

This does not affect the taste, though. Maybe try putting the bananas beneath the cream rather than over it? That way it still looks nice.

Best way as mentioned by other users is Lemon Juice. Primarily, if you slice up your bananas before you make the pie, put some lemon juice into a bowl, and place your cut or sliced banana into the juice, and toss it round with a spoon so that the lemon juice covers the pieces.

The acid prevents oxidization (which is what turns your bananas black and mushy) so it will keep them their natural color until you are ready to prep your pie.

Put them on the pie at the last minute before serving to keep them from getting brown and slimy. Bananas do not look good after being refrigerated, so only add the slices at the end.

Try squeezing, a little Lemon juice on them, the acid wont hurt, only help bring out the taste, and will keep them from turning brown..

I'm not sure what your asking, but if they are turning black I think a little lemon juice will stop that.
