Try this, a very flavoursome recipe I always make. It's from my own kitchen recipe book:
Rice Rissoto with Herbs & Baby Carrots:
Ingredients:
Have your meat washed and ready in a bowl (cubes or however you wish).
One big onion finely chopped.
3 cloves of garlic mashed.
Big handful of washed parsley chopped.
I tomato chopped.
Peel a handful of baby carrots or canned baby carrots- be as flexible as you want.
salt to taste- about small teaspoons.
two pinches of black pepper
Small teaspoon of mild curry powder.
2 cups of rice washed half an hour before you cook and leave to covered in cold water till use ( serves about 2-3 people). (Tilda is good rice but can be done with any rice at all really)
1 china cupful of sunflower oil
Kettle of warm water.
Method:
Warm oil in medium pan ( one that can be put in oven later) over low-medium heat- brown until edges are almost turning reddish.
Add mutton, and stir- brown all over.
Add parsley and stir, leave for a few seconds or so.
Add tomato, stir and leave for a minute.
Add all the spices except the salt . Stir and mix well.
Add a little bit of warmwater- about half a teacup. Stir and leave for a minute. This is to let the spices dissolve well and bring out the flavour before adding more water. A very important step.
Now add more warm water to cover the mutton and stir. Let this cook for about 25-30 minutes.
Add raw baby carrots to this and leave until carrots are done. If you are using canned carrots cook mutton for about 40 minutes before adding them.
At the time you add the carrots add the SALT and stir.
Warm the oven at about 300-350. Put rack at lowest level at bottom so the pan's bottom doesn't directly touch the oven.
Drain water from rice ( Tilda is great rice for this recipe)
Add rice to pan, stir to distribute rice evenly and cover.
Lower the heat a teeny bit- and leave until the rice has obsorbed most of the water but can be seen and is just about bubbly at surface.
At this time put pan in oven on rack and leave for about 10 minutes. (Check IF rice seems still a little hard you can always add a little warm water from the kettle over it- about a cupful).
Once done , fluff with fork a little ( this will make it easier to serve after) and place back in oven. Turn off oven and leave till its time to serve.
Place on platter, garnish with lemon slices and serve with an okra in tomato sauce side dish.
Options: You can use any other veggies. There are loads of ways to make different variations - just enjoy!

This is a French recipe called "Haricot de Mouton"
You will need the mutton of course (1.2kg)
250g of haricot beans (dried are better than tinned)
40g of butter
2 onions
20g of flour
1 clove garlic
Bouquet garni (parsley, thyme, bayleaf)
Parsley, salt and pepper
put the beans in a pan with cold water, no salt. Put to the boil for 15 minutes. Drain.
Melt the butter in a casserole. Put in the meat and stir until golden brown. Add the onions cut in 4. When they are golden, pout the flour. Stir and put 1/2 litre of warm water.
Add the beans, garlic and bouquet garni. Put lid on and simmer for 1 and a half hour. If the water evaporates too quickly, add boiling water during cooking time. Put chopped parsley before serving.

Mutton really needs to be cooked slowley as you sound like you already know.
The next best thing to make would be a great lamb curry. The best way to do this is buy a good Indian Curry base and add things as you desire.
A lamd vindaloo is great if you like hot curries.
You can make a great curry from scratch if you like (and have time)
Another dish (which I don't really like) is Irish stew...But Mutton is perfect for this.

lamb kebabs, just cube the mutton and stick it on some skewers with some peppers, mushrooms and tomatoes....nice!
