We order these stuff by bulk to get wholesale discount. Do we store them in freezers or chillers? And how do we store them.

Store them in a tightly closed container. Store in chillers and use them within a few days.

Store them in a refrigerator. A freezer will destroy them.
Bell peppers in a closed plastic bag, carrots in a cardboard box.

If kept for long periods of time the best thing to do with peppers is dehydrate them.
If you don't have a dehydrator they can be dried in an oven.
Dice them, spread in a single layer on a cookie sheet, and dry in the oven at it's lowest setting with the door cracked open.
Check every hour, occasionally stirring them till dry (may take 4 or more hours).

Store unwashed bell peppers in a plastic bag in the refrigerator. They will stay fresh for about a week. Green bell peppers will stay fresh a little longer than the yellow and red ones.

Store unwashed carrots in a plastic bag in the refrigerator. They will stay fresh for about two weeks.
