If you've got enough money (and skills!) to play at the high limit tables at Full Tilt Poker you can play against a ton of poker pros... I've seen Phil Ivey playing at the 1000/2000 limit hold em game many times. When you log in just look for the tables that are in red and those are the ones with pros playing at them. They also play in tournaments where the buy-in is much more affordable - but you're fairly unlikely to actually be at the same table as the pro.

Phil Hellmuth is known to play at PokerStars and Ultimate Bet... Mike "the mouth" plays at Full Tilt and PokerStars... Jamie Gold is associated with Bodog, but I don't know that he actually plays on there - I think he's more of a spokesperson.

Tony G Poker is the best way to go to play a celebrity. Tony G plays on it ever day! If you don't know who he is, he won the WPT. He also is on you tube if you want to see his hilarious trash talking! Also if you knock Tony G out you get $50-$100, depending on the tourney.
