This is a hard one. I have not been able to keep mice out of mine. I guess this is due to the fact that birds are so messy and no matter how much you clean your aviary, there is always going to be something in there to attract the mice.
I try to keep disgarded food to a minimum. It may help to examine the outer perimeter of your aviary and see where they are getting in at.
I also set live traps so that I can catch the mice when they do manage to get in.

I bought a ceramic birdbath, the kind that is on a pedestal. I use this to feed the birds. It is smooth, so the mice can't climb it, and the sides are high enough the birds don't throw the seeds out. This has pretty nearly eliminated mice in my aviary; the mice used to eat the seeds on the floor.

You use Tomcat mice bait in a no-kill trap. The bait lures them in and the trap is big enough to hold several mice. You can wait til the mice die, or drown them in the trap in a bucket of water.

You keep the seed in plastic buckets and vacuum your aviary so the discarded seed is picked up. Just keep your birds clean and you won't have a problem.

if you have bird seed, you're gonna have mice! you can't use poison inside the aviary because the birds might get it, did you know that somethimes the mice will get your baby birds? my aviary had dirt floors and the mice had tunnels coming into the pens, periodically we would stick the garden hose into the holes and flood the tunnels, the mice would come out and our terriers would quickly kill them, really that was the easiest way to get rid of them.

Their going after the food. Mice and squirrels can be the most persistent and stubborn when it comes to getting to food. (I've seen a squirrel claw up a glass window to get to food). The only way is to limit their access to the food. Either feed the birds on a schedule and don't leave any food in their cages or find a way to keep the mice from getting in or to them.

Put a horned owl in it or get a female young cat. The females are better hunters than the males. Do not declaw her.
It is possible to raise a kitten around birds and the kitten will feel friendly to the birds and not want to kill them.

keep all food in airtight, secure containers. Keep all food bowls elevated, and regularly clean the floor area of discarded seed.

have some gees in there, they pite mice and kick them out. If you can bear their loud voice then go ahead and have a couple of them.
