All common fats are combinations of fatty acids and the glycerol molecule. Since there are three alcohol groups in glycerol that is where we get the term triglyceride.
Fatty acids can occur as saturated (no double bonds), Monounsaturated (one double bond), or polyunsaturated (more than one double bond).
Examples of saturated acids are lauric (C12), myristic (C14), palmitic (C16), and stearic (C18).
Examples of monounsaturated acids are oleic (C18), and palmitoleic (C16), which each have one double bond.
Linoleic acid is a polyunsaturated acid with 16 carbons and 2 double bonds.
If we form triglycerides from 5 different fatty acids there are 125 ways that they can form triglycerides.
It is rare to have simple triglycerides (one fatty acid) so most triglycerides are mixed triglycerides (more than one fatty acid).
