basic vinaigrette
1 part vinegar
3 parts oil
1 T Dijon Mustard for every cup of vinegar/ 3 cups oil
add your favorite herbs
minced onions/ garlic or cheat and use granulated
the vinegar I prefer balsamic but apple cider red wine rice wine all work. oil virgin olive oil I prefer but canola or vegetable can be used
1st add the vinegar, seasonings and mustard together either by hand or with a mixer if u have a mixer us it cause it takes forever by hand to complete the dressing now u have started the emulsification you can slowly add the oil very little at a time and each time make sure that it is all incorporated before adding more after making the dressing a few times u will be able to slowly pour the oil into constantly in to the vinegar mixture when finished you will have a thickened dressing best if made a day ahead or at least 2 hours before consumption can be stored tightly covered at room temperature for about a week

There are so many good salad dressings in the supermarket now that I find it too time consuming to make one up except for a fast oil and vinegar and herb based dressing that is quick to make.

My favorite is a blue cheese salad dressing that is so good and actual not fattening. All you have to do is get a small container of chunks of blue cheese and then mix it in with some sour cream and it is so yummy! When you chill it in the fridge for a while make sure you stir it before having more of it.

I would go with a simple Japanese style dressing.
Mix some sesame oil, soy sauce, brown sugar, orange juice, some chopped garlic, chopped ginger, and just a little bit of chopped shallot, you can add bit of kick into it by putting some chilli paste...hmmm Yummmm
The flavor is amazing!!! you should try.

I would say favorite for me would be easiest. That would be a quickie thousand island dressing. Use miracle whip or mayo, some shakes of ketchup, a sprinkle of sugar, stir. If too thick, add a bit of milk, like a teaspoon at a time till you get the right consistency. To make it a bit fancier, add sweet pickle relish.. fancier still.. add finely chopped hard boiled egg.

Olive oil + fresh lime juice + salt, pepper and dried mint.
It is specially great with chopped cucumber, onion and tomatoes.
