How far in advance do you want to make them?

You could mash the potatoes the day ahead. Don't add anything except maybe the butter.

The day of the dinner, heat the potatoes in a double boiler, then add all the other ingredients.

That would at least save you the peeling, cutting, boiling and mashing.

YES you can and my wife's recipe rocks. It is the BEST. here is is.

Garlic mashed potatoes are another traditional holiday side dish. I don’t generally freeze this (and I’m not sure if I could…but if you happen to have an opinion, please share!) I DO usually make this two or three days ahead and just pop it in the oven on Christmas Day.


Garlic Mashed Potatoes

Cook 5 lbs potatoes with 2 tsp salt in 4 cups water
Drain and mash. I usually do this in my kitchenaid mixer as well.
Add:

6 oz cream cheese
2 T. finely minced garlic (I like to use grilled garlic cloves that I’ve minced)
1/2 cup butter
1 tsp. salt or to taste
1-1/2 to 1-3/4 cups milk
On Christmas Day :
Spread potatoes in greased baking dish; bake in oven at 350° for 45 minutes.

Yes you can! But......most common mistake is using fresh garlic.....can get hotter and more potent in your mash! I suggest roasting the garlic, then adding it to your mashed potatoes. Makes for a garlic taste, a bit sweeter with out the harsh bitter garlic taste.

To roast: Cut the Bottom of the garlic head off - enough to expose each clove. Drizzle with olive oil. Wrap in foil and bake at 350 - 400 in oven for approx. 1 hour. You should then be able to cool and then squeeze the entire continents of garlic cloves like a butter into your mashed potatoes.

Yes. Make them and then just reheat them before serving. If you make them the day before, take them out and let them get to room temp. before you reheat. If you make them say, an hour before dinner, keep them out of the fridge and reheat right before dinner. You might need to add a bit of butter to freshen them up. Have you ever eaten leftover mashed potatoes?

If you're tyring to impress your mother-in-law or something, I'd just make them fresh.

You can and then reheat them. Personally I much prefer mashed potatoes freshly made to refridgerated and warmed up ones.

I do not see why you could not do this. Just have to warm them up when you are ready to eat. Personally, I like the potatoes hot and fresh and make them right before the meal.
