Fall Apple Bread Recipe
1/4 cup butter
2/3 cup sugar
2 eggs, beaten
1 1/2 teaspoons vanilla
2 cups flour, sifted
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
2 cups peeled, grated apples
1 Tablespoon grated lemon rind (zest)
2/3 cup walnuts, chopped
1. Cream together butter, sugar, vanilla and beaten eggs.
2. In a large bowl combine all the dry ingredients - flour, baking powder, soda, salt and cinnamon. Sift.
3. Add a little at a time with a large spoon - egg mixture and grated apples to flour mixture. Stir in lemon rind and nuts. Mix well.
4. Pour apple bread mixture into 2 greased and floured loaf pans.
5. Bake the apple bread at 350 degrees for 55-60 minutes. To test if the loaves are done, a toothpick comes out clean.
Makes 2 Apple Bread loaves depending on size of loaf pans.
Make half of this recipe for one small loaf pan.
Let the loaves cool before slicing - then spread with butter and enjoy!

Easy Apple Bread

2 apples, grated
1 teaspoon salt
1 cup chopped nuts (optional)
1 teaspoon baking soda
Preheat oven to 300 degrees.
In a large bowl, mix together all ingredients until well blended.
Pour batter into 2 greased loaf pans.
Bake for about 1 hour.

Apple Walnut Bread
1 cup sugar
1/2 cup (1 stick) butter, softened
2 eggs
1/3 cup milk
1 teaspoon vanilla extract
2 cups unsifted all-purpose flour
1 teaspoon baking powder
1 teaspoon apple pie spice or ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped apples (about 1/4-inch cubes)
1/2 cup chopped walnuts
Preheat oven to 350 degrees F. Grease a 9-inch loaf pan. In large bowl with electric mixer, beat sugar and butter on high speed until fluffy. Beat in eggs, milk and vanilla. Stir in flour, baking powder, spice, baking soda and salt just until flour is moistened. Fold in apples and nuts; transfer to greased pan. Bake bread 50 to 55 minutes or until a cake tester inserted in the center comes out clean. Cool 5 minutes in pan, then remove to wire rack to cool completely.

Rosemary-Apple Bread:
3 cups all-purpose flour, divided
1 1/4 teaspoons salt
1 teaspoon finely chopped fresh rosemary
1 package quick-rise yeast (about 2 1/4 teaspoons)
1 cup warm water (100° to 110°)
1 cup diced peeled Granny Smith apple (about 1 small)
Cooking spray
2 teaspoons butter, melted
Lightly spoon flour into dry measuring cups; level with a knife. Combine 2 3/4 cups flour, salt, rosemary, and yeast in a large bowl, stirring with a whisk. Add water, stirring until a soft dough forms. Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands. Cover and let rest 5 minutes. Knead in apple. Place the dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rest 10 minutes.
Preheat oven to 375°.
Shape dough into a loaf; place dough in an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Gently press dough into pan; cover. Let rise in a warm place (85°), free from drafts, 30 minutes or until doubled in size.
Bake at 375° for 45 minutes or until bread is lightly browned and sounds hollow when tapped. Brush top with butter. Cool in pan 5 minutes. Remove from pan, and cool completely on a wire rack.
Yield: 16 servings (serving size: 1 slice)
