How many gallons of water per minute come out of a 2 inch pipe at 25psi??

you don't give the pipe length or condition....10 points off for you.

however, 50 ft of 2 in with a 140 hw coeff and 60 ft of head....I guessed 25 psi.. results in 268 gpm

You do have enough information, providing the pipe diameter is really two inches. You will get about 600 gpm.
