Depends on the weight but as long as they are cubed and covered completely with water with a little salt (1/3 teaspoon max) they should be brought to a boil and reduced to medium heat for 25-35 minutes to slow boil (just above simmer) this should give you nice potatoes to drain for mashing - don't over boil or they start to crumble and are better suited for soup. Put your peeled, cubed potatoes in a pot of cold water. Add some salt and bring to a boil. After 5 - 7 minutes of boiling time, check them with a fork. If they are tender and yield to the fork, they are done. Be careful not to overcook them. You'll know they are over done when you insert the fork and they fall apart. This will make mushy, grainy mashed potatoes. Good luck.

Until they are fork tender which means when you can easily insert a fork through them (try several potatoes to make sure). Do not overcook them as they will become waterlogged. Drain them thoroughly and return them to the hot pan (flame on low) immediately to help cook off some of the moisture.

Start them in cold water... bring to a boil. Boil 5 minutes, drain in a colander, set atop cooking pot, adn cover w/ a dishtowel for 15-20 minutes.

If they ate 1.5 to 2 " cubes it should take aprox. 20 min. To check to see if they are cooked stick a toothpick in one. If it sticks it's not ready, if it slides off, good to go.
