Mushrooms are under deep-fried vegetables, at the bottom...

"Fried Onion Rings" - 6 servings

1 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 egg
2/3 cup beer
Salad oil
1 large onion; sliced and separated into rings
Salt

1) In medium bowl, combine first 5 ingredients and 1 tsp. oil. With wire whisk, beat until smooth. Cover; chill at least 2 hours.
2) About 30 minutes before serving: In 4-quart saucepan, heat 2" oil to 375*. Dip onion rings into batter; fry a few at a time until golden. Drain on paper towels. Sprinkle with salt; serve immediately.
DEEP-FRIED VEGETABLES: Prepare as above, but substitute eggplant sticks, zucchini chunks or small whole mushrooms for sliced onion.
(TIP: Keep fried vegetables warm in 250* oven while frying remaining batches.)

Simple. I just dip in beaten egg, then in seasoned breadcrumbs, then fry. Not hard at all.
