how to make a good Tiramisu when i can't find mascarpone cheese is there any substitute for it ?and can i do it with out alchol at all ?

As far as substituting for mascarpone, your best bet is probably to whip ricotta cheese until smooth and use that. There are a variety of other substitutes suggested at http://www.heavenlytiramisu.com/mascarpo.htm

As far as making it without alcohol, it seems a lot of people do that. I found info suggesting substituting orange juice for the marsala wine and also for adding a coffee syrup such as Torani's Tiramisu syrup for both the wine and the rum. Some people just leave it out altogether and don't bother to replace it with anything. There are many recipes for tiramisu at the website I sited above. Good luck!

Yes to both of your questions, just use ricotta cheese and add a brick of cream cheese, blend them in a food processor or warm the cream cheese in the microwave, not hot, whip it and then fold in the ricotta cheese, it will cost 1/2 the price Mascapone generally costs $5-6 a 500ml or pound tub.

Just when soaking the biscuits use the coffee and add some vanilla, or add a flavouring like almond or rum extract, just add it to the coffee and saok the biscuits and keep some aside to add to the filling, if you want to save a bit more, use an instant vanilla pudding, keep back a quater cup of the milk and to make it richer, use half and ahlf to make the pudding, fold in the cheeses and coffee, and then layer it with the biscuits. Make the filling first, then start your layering.

I was a chef for 20 yr in Canada, and we used to make this for our Sunday Brunches and no one knew the difference from our regular everyday one and it was vacuumed up like there was no tomorrow.
