Garlic Broiled Chicken

1/2 cup butter
3 tablespoons minced garlic
3 tablespoons soy sauce
1/4 teaspoon black pepper
1 tablespoon dried parsley
dried parsley, to taste

Preheat the oven broiler. Lightly grease a baking pan. In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and parsley. Cook 2 minutes on High in the microwave, or until butter is melted.

Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting. Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

Broiled Chicken in Ginger Sauce

12 chicken thighs or substitute 6 legs, halved, or use a whole chicken, cut into 12 pieces.
1 tablespoon salt
2 tablespoons finely chopped fresh ginger root
2 scallions, finely chopped
1 garlic clove, finely chopped
2 tablespoon peanut oil
1/4 cup soy sauce
1 tablespoon sugar
1 tablespoon sesame seeds

Sprinkle the salt over the chicken pieces and set aside. Then set aside the ginger root, scallions and garlic in separate piles on a plate. Heat a skillet or wok. Add the oil and lightly brown the ginger, then add the scallions and garlic and stir fry for 1 minute. Add the soy sauce and sugar, and bring to a boil. Turn off the heat and add the sesame-seed oil. Put the chicken pieces in this sauce rubbing it all over and marinate for at least 1 hour or longer in refrigerator.

Preheat the broiler to 450-F. Place the chicken pieces meat side up on the rack of the broiler pan and broil using the center oven rack for 15 minutes, or until golden brown. Baste once with the left over marinade. Turn over the chicken pieces and broil for about 20 minutes more. Do not baste again so that the skin may become crispy. Serves 4

Broiled Chicken with Tarragon Pasilla Marinade

6 x boneless skinless chicken breasts, 4-6 oz. each
1 tbl crushed fresh tarragon leaves, OR
1 tsp crushed dried tarragon
4 x green onions, chopped
1 cup dry, (French) vermouth
2 x cloves garlic, cut in half
1 x pasilla chile, seeded and chopped

Place the chicken breasts in a shallow glass bowl. Mix together the rest of the ingredients, pour over the chicken, and marinate in the refrigerator for 1 hour.

Remove from the marinade and reserve the marinade. Broil the chicken over a hot barbecue or on a stovetop grill for 2 to 3 minutes on each side or until done, basting with the marinade and turning the chicken breasts two or three times.

i dont think theres any trick but just dont over broil
