I would say "Quiero que mi cuarto sea rosa." mi and me are not the same in Spanish. mi (said mee) means "my," while me (pronounced may) means "to me." Adding the "color de" in there is unneccesary, but its fine that way. if you say "Quiero que mi cuarto sea rosa." it is I want my room to be pink, but if you say "Quiero que mi cuarto sea de color rosa." it is I want my room to be of a pink color. Either way is acceptable, but I think it makes more sense without the "de color."
By the way, recamara COULD be used as room, but it's usually used in the sense of "dormitory." This might work better for you if you are in college etc.
