Carbs are sugars. The sugar in Coca-Cola, the sugar you put into tea, or coffee, or a cookie recipe are called refined sugars. They are easy for the body to break down into energy, but your body sometimes overcompensates (giving you a sugar low!)
Breads, pastas, have more "complex carbohydrates", and it takes longer for that energy to be used by the body. A calorie is a calorie just the same, but since the complex carbs work over time, your body is able to use them better.

ok, first of all, fatty foods do not have always have lots of : carbs, look at the back of a butter box, there are no carbs, just fat. Anyway, pasta is pure carbohydrates and unlike sugar, these are the good kind of carbs.

Food that is fryed not baked has more carbs. Things with lots of sugar/fats have alot of carbs. Anything with alot of oil has alot of carbs and buttery foods have alot of carbs.
