Cooking times vary for shrimp and scallops depending on what method of cooking you use. Both items only take a few minutes to cook are are very easy to tell when they are done.

You can tell when Shrimp is cooked because the blue or grey coloring to it turns pink/red.
you can tell when Scallops are cooked because the milky-clear color turns to a solid white color.

If you are baking them an oven of 350 degrees will work best. Make sure you season them before cooking them or while cooking them to maximize their tastes. butter and garlic are easy and good!

how long to cook jumbo shrimp and scallops and at what temp?

Depends how you're cooking them, but shrimp take only a few minutes at the very most.

I like to do mine on the top of the oven range (not baked), and the shrimp should cook until they are pink/red on both sides but not much more.

For large scallops, a few mins on each side until they brown, and then turn them - they should change from translucent to opaque, and then they are probably done.

You don't say how you're cooking them, but if you're sauteing, you should use high heat. Both tend to get overcooked. Shrimp should turn pink, scallops should turn opaque. Depending on the size of these, it probably takes about 5 minutes. Remember they continue to cook a little after you take them off the heat.

Temp depends on what method you're using.

Shrimp until just pink
Scallops until just firm

Cook them both until they are opaque. Shrimp will turn pink & white, either boiled or sauteed, even grilled. Scallops will turn white and should be seared on each side and cooked quickly.
Literally minutes for each.
