Because the finest 'plates' etc used to come from China...
They developed a level of pottery that was incredible by any standard something like a thousand or more years ago... very fine grained, and incredibly decorated...
Thus - fine china...

The clay used to make china is called kaolinite and is found in China. Some people refer to any good dishes they have as china. But it is either only jokingly or because they don't know any better. It used to be many peoples good dishes were china.

Paper plates. Obviously I don't have an answer for that but I do know how they name their children. They throw up their silverware and let it land on a hardwood floor. Whatever sounds it makes is what they name their kids. Ping Ting Wang, Kong Dong Bonk, etc.

They used to be made in China. Originally high quality porcelain. That's why.
