Spinach enchiladas are good,
Brown burger, drain, add frozen spinach, cook until warm. Mix in fat free sour cream, wrap in tortillas, cover with spicy enchilada sauce and bake for 30 minutes. YUM!! Serve with lettuce and veggies.

If you have to use ground beef, use the leanest you can buy. I like to take large slices of green bell peppers and onions and put them beside the patty and BAKE it for about 35-40 minutes at 350. The juices all blend together and it's yum yum yummy. You can even add some red potatoes cut in pieces and get the taste blended in them, too. Season well but not too much salt. I use spicey mustard sometimes to really jazz it up. Add this to the meat before you put it in the oven to bake. Make it like a meatloaf but leave out the bread crumbs or crackers. The leaner the meat the lower the fat.

I make spanish rice a lot. brown ground beef, onion, garlic,and green pepper, and drain well. Then add a can of diced tomatoes. I use whole grain brown rice, making an allowance for the liquid in the tomatoes when I add the water for the rice. Sometimes I add beans, too--usually kidney beans. Cover and simmer till the rice is done, stirring occasionally. You can season it with some chili powder also. If you like, top it with a little sour cream, or my fave, parmesan cheese. Enjoy!

Tacos are REALLY easy.

Fry up ground beef. Season if you want to. Put in shells with lettuce, beans, and cheese. Eat. You're done.

Spaghetti isn't bad either, especially if you use crushed tomatoes instead of spaghetti sauce.

Lo-Fat Home-Style Meatloaf

3/4 cup uncooked quick-cooking oatmeal
1/2 cup nonfat milk
1/2 cup reduced-sodium chicken broth
1/2 cup shredded carrots
1/4 cup diced onions
1 large egg, lightly beaten
3 tablespoons chopped fresh parsley
2 garlic cloves, minced
2 teaspoons Dijon mustard
2 teaspoons salt
1/4 teaspoon fresh coarse ground black pepper
3/4 lb ground turkey breast
3/4 lb 95% lean ground beef (5 % fat or less)


Preheat oven to 350 degrees.
Line a 5 X 9-inch loaf pan with foil.
Combine the oatmeal, milk, broth, carrots, onion, egg, parsley, garlic,.
mustard, salt, pepper in a large bowl.
Gently mix the turkey and beef inches.

Add the turkey mixture to the oatmeal mixture Mix just until blended.
Spoon the mixture into the pan, smooth the top.
Bake until a meat thermometer inserted into the center of the loaf registers 165 degrees - about 1 hour.
Let stand 10 minutes.

LOW FAT GROUND BEEF CASSEROLE


1 (5 oz.) pkg. noodles
1 1/2 lb. ground chuck
1 (8 oz.) can tomato sauce
1 c. Lite-n-Sour cream
1 c. low fat cottage cheese
1 c. lite line Cheddar cheese, grated
1 tsp. salt
Pepper to taste
1 tsp. garlic salt
Parmesan cheese

Cook ground chuck in microwave (drain fat). Add salt, pepper, garlic salt and tomato sauce with ground beef in skillet in skillet. Simmer for 5 minutes. Remove from heat.
Combine cottage cheese, sour cream, onions and noodles. Make layers of meat and ingredients in casserole dish. Top with cheese. Sprinkle Parmesan cheese as desired. Bake at 375 degrees for 30 minutes.

how about brown the beef then drain it from the fat add tomato sauce and put over whole wheat pasta and eat with whole wheat bread and add part skim mozzerella

You need to use ground turkey instead. Hamburger is high in fat!
