Best-Ever Oatmeal Cookies:

1 cup brown sugar
1 cup white sugar
1 cup (2 sticks) butter or margarine
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 eggs
2 cups quick-cooking oatmeal
1 teaspoon baking soda
2 cups flour

Prep time: 10 minutes
Baking time: 12 minutes

1. Preheat oven to 350 degrees. Cream both sugars, butter, vanilla,and almond extract in a bowl. Add the eggs and mix.

2. Mix the oatmeal, baking soda, and flour in a separate bowl; add to the butter-and-sugar mixture and stir together.

3. Place the dough by teaspoonfuls onto ungreased baking sheets. Bake about 12 minutes, or until lightly brown around the edges. Cool cookies slightly before removing them from the sheet.

Yield: 42 cookies

peanut butter cookies:
1 cup shortening or butter
1 cup peanut butter (creamy or crunchy)
1 cup sugar
1 cup packed brown sugar
1 teaspoon vanilla
3 eggs
3 cups flour
2 teaspoons baking soda
1/4 teaspoon salt

FILLING :

1/2 cup creamy peanut butter
3 cups icing sugar
1 teaspoon vanilla
5-6 teaspoons milk


directions:
Cream together shortening, peanut butter and sugars.
Add vanilla.
Add eggs, one at a time, beating well after each one.
Mix together flour, baking soda and salt.
Add dry ingredients to creamed mixture.
Shape into 1 inch balls and place on uncreased baking sheets.
Flatten slightly with a fork.
Bake at 375 F for about 8 minutes until golden. When you take them out, they will be a bit soft but leave them on the sheet for a couple minutes and they will continue to cook.
Remove from the sheet and cool on wire racks.
Meanwhile, in a mixing bowl, beat filling ingredients until smooth.
Spread on one half of cool cookies and top each with another cookie.

I am going to give you two recipies. This one is for chocolate chip cookies. Here they are:
You will need
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup softened unsalted butter
3/4 cup brown sugar
3/4 cup sugar
1 tbsp. vanilla extract
1 egg
1 egg yolk
2 1/2 cups semisweet chocolate chips

This is how you make it
1.Stir together flour, baking soda and salt. Do not sift.
2.Beat the butter until creamy, then add the sugars and vanilla and stir them in until combined.
3.Add the egg and yolk one at a time, mixing well after each addition.
4.Stir in flour mixture. Stop stirring the instant it has all been incorporated.
5. Stir in chocolate chips, making sure to place them evenly.
6.Form dough in a log, wrap it and chill it for at least 30 minutes.
7.Heat the oven to 350 degrees and line some cookie sheets with baking parchment.
8.Cut dough into thin rounds or form into cookies, place on baking sheets.
9.Bake for 10 minutes or until the edges begin to turn golden.

Here is one for sugar cookies:
You will need
Measuring Spoons
1/2 tsp. lemons extract
1 1/2 c. all-purpose flour
Cookie sheets
Oven mitts
2/3 c. softened unsalted butters
2/3 c. sugars
Measuring cups
1 egg yolks
Cooling Racks
1 1/2 tsp. baking powder
1/3 tsp. salt
2 tsp. vanilla extract
1 eggs
Mixing Spoons
Mixing bowls

This is how you make it.
1.Combine the flour, salt and baking powder. Do not sift.
2. Beat the butter until creamy, then add the sugar, vanilla and lemon extract and beat for 1 minute.
3.Beat in the egg and yolk.
4. Stir in the flour mixture only until incorporated. Stop stirring the instant the dough is uniform.
5.Form into a log, wrap in plastic wrap, and chill for at least 2 hours.
6.Heat oven to 350 degrees F.
7. Divide the dough and roll it out between two sheets of wax paper; make your cutouts. Only work with a little at a time. Keep the rest in the refrigerator to stay chilled.
8. Decorate the tops of the cookies with colored sugar, sprinkles, candies and other foods that won't melt in the oven.
9. Place the cookies on a nonstick baking sheet and cook for 10 minutes, or until they just start to turn golden around the edges. If cookies turn golden before 10 minutes have passed, lower the oven temperature.

CHOCOLATE BLISS PEANUT BUTTER COOKIES

1 PKG., 8 SQUARES, SEMI-SWEET BAKING CHOC.
¾ C BROWN SUGAR
