Vegan Roast
Ingredients
potatoes
parsnips
cabbage
carrots
peas
To make a roast dinner for vegans may seem quite difficult but it is actually very easy. Make sure that the potatoes are not roasted in lard and they will then be suitable for vegans. As long as the vegetables are boiled or steamed they will also be suitable. To go with the vegetables there is a selection of nut roasts available but I find that stuffing can be just as good.
Finish off with gravy which you cook as below. Finely chop the onion and fry in 1 tablespoon of vegetable oil until see through. Add the stock cubes, marmite and Worcester sauce and half a pint of water and stir thoroughly. Leave to gently simmer for 30 minutes.

Got to be a traditional Christmas dinner - Roast turkey, stuffing, roast potatoes, chippolata sausage, and plenty of lovely veggies, prefferably carrots, peas and *mutters quietly* sprouts!
Lovely, filling, and a true reminder of Christmas Past!

Much depends on the mood I'm in and who cooked it and what it is presented with. In all honesty enjoy all roasts, especially when they have the traditional accompaniment i.e. roast pork, stuffing and apple sauce, roast beef, horseradish and yorkshire pud, lamb, new potatoes and mint sauce, turkey and cranberry etc. etc. Got to stop know as my tum is rumbling.

I put my roast in a crock pot with a can of cream of mushroom soup and an envelope of lipton's onion soup mix...add some water and turn on low for about 8 hours...makes the best gravy for mashed potatoes.
