The company that organises it provides all the equipment - wetsuits, boards, etc. - practically everything. I have rough idea of what clothes to take. Obviously flip flops, shorts, toothbrush, razor would be a must.
But what am I missing?
I'd like to only go with hand luggage too, which in the current security climate does not go a long way, so only essentials, please.... Things that I would slap my forehead about when I get there, if you see what I mean.

I think you are travelling too light with hand luggage. I would take some clothes for going out at night with several changes of clothes. I would check the weather forecasts to see if you might need something warmer for the night. Socks and undies for the nighttime as well as shoes would be good. Don't just prepare for going surfing in the day but the night as well.
Toiletries are a must razor, shaving cream, aftershave and a good cologne for night time. Toothpaste, toothbrush, soap and shampoo are others. Mobile phone and digital cameras are good to have.
You will be out in the sun all day. Take sun cream so that you don't get sunburn. Have something for your nose and lips as well. You should also have a shirt to slip on when you're not surfing and a hat to help protect you from the sun. If you are out in the sun, you should always slip, slop, slap. (slip on a shirt, slop on sun screen and slap on a hat). You don't want to get skin cancer.
Have a great time and make sure you are prepared.

I'd say you'll probably need the usual warm-weather essentials, those that you've mentioned and also:
Hat, sunscreen, shades, shirts/shorts for warm and breezy weather too and any dressy clothes if you plan on going out, music/games player or book/mag for the trip over there, mobile phone, bandana/hairband to keep the wet hair looking good, a backpack would be useful to keep all your essentials in when you're out surfing, E111 (or whatever theyve changed the new name to) card for insurance, money, travellers cheques if necessary.
Can't think of much else you'd need!
I'm off on my first skiing holiday on the 16th so I know the feeling of trying to get everything all sorted!

Have seen a lot of good advice here, but some things I would definitely want to bring along on such a trip include a good diving mask with a snorkel, some of those single-use waterproof cameras, and a bunch of cheap but effective sunglasses. If you have a favorite variety of surfboard wax, bring a square or two of what you're used to using.

Two towels, driving licence and a credit card because some of the surfing spots are remote and you may feel like you want to hire a car and drive to some livelier pubs and clubs a couple of nights-I encountered this problem, and I did slap my head when I didn't have a driving licence.

under wear, swim suit, nice shirt, 1 pair of jeans, board shorts, rash vest, and sun lotion and toiletries. eg toothbrush paste shaving stuff and baby oil :D have a good holiday

hm,, i think that you should pack some shaving creme, some tanning lotion, and some string cheese. those are good stuff. and a swim suit. :-) and yourself . f course. :-p
